Our pasta is carefully prepared from scratch on premise. The whole process lasts five to six hours, not counting the time for drying. Once the pasta is pulled and formed (laminated), it must be placed in the driers, which were handmade by Marco and Fabrizio, Patricia’s husband, in the early years of the shop. These driers force the air through the strands of pasta, preventing them from sticking and preparing them for the shelf.
